The ethnically and economically diverse mill town of about 15,000 residents is home to Incredible Edible, an ambitious, agrarian-minded scheme that’s brought together an entire community under one common goal: to become completely self-sufficient in food by the year 2018. Only very recently did I talk to my good friend Katja about how amazing it would be to really start living off of local, seasonal and organic produce and learning better ways to preserve food over the winter months to become self-sufficient … and then I see this. Perfect! I hope this can be a project model for many more places.
